If there is one thing I know about summertime, it is that my boys are outside from (almost) the moment their feet hit the ground in the morning to when the sun goes down. And they are 110% BOYS. They.never.stop.going.

I began to experiment with homemade (cold) treats to make for them because they would come in, in the middle of the afternoon, hot and wanting a snack. Well, what better way to cool off than with some YUMMY popsicles!?

This ridiculously quick, two-ingredient recipe is the perfect treat to whip up first thing in the morning and have ready for those afternoon snacks!

  • Food processor or blender
  • Popsicle containers
  • Watermelon {I recommend getting a seedless one — who wants to spend time picking out seeds} 😉
  • Mini-chocolates

  1. Rough chop the watermelon into cubes and put into food processor/blender. I used about 1/4 of a watermelon and it filled up two sets (of 4) popsicles.
  2. Pulse to get watermelon to a puree consistency.

3. Place some of your mini-chocolate chips in the bottom of your popsicle containers then pour puree into containers. *I added some more chips on top of the puree once I filled the containers up then poked a knife around in it to get the chips pushed down and dispersed evenly throughout the puree. Which, ironically, made it look like black watermelon seeds in the popsicles!

4. Place on a flat surface in freezer and leave in freezer until hardened.

I really hope that you enjoyed this recipe! One of the reasons I love this one so much is because of the simplicity of it! Oh, and it is actually pretty darn healthy compared to a lot of store-bought popsicles! It is super simple, so the kids can even get in on helping make them! My boys usually help me out but they were too busy playing outside — go figure!
